SPRIG Pasilla chilés are sourced from central Mexico so as to retain all the hallmarks of a Mexican Pasilla, a spicy flavour with berry-raisin-cocoa overtones. These dark, rich flavoured chilé peppers are also used for making the authentic traditional Mexican Molé sauces and other Mexican recipes. Being a part of “Holy Trinity” with Ancho and Mulato, Pasilla chilés are excellent ingredients for adobo sauces and salsas. They are often combined with fruits and are excellent when served with duck, seafood, lamb, mushrooms, garlic, fennel, honey or oregano.
